What will you be having for breakfast on the 25th? After that big meal the night before, don’t you slave in the kitchen again! Keep the excitement going by surprising your family/guests with these fluffy and savory pumpkin pancakes.

I just love pancankes and was disheartened at the thought of not being able to eat them again due to the gluten in flour.  But after searching high and low for gluten free pancakes, I found the recipe below. I tried it and these pancakes are savory and easy to whip. You will be replacing regular wheat flour with coconut flour, which is much more nutritious at the end.

Because coconut flour comes from the meat of dried coconut, it is high in protein, very rich in fiber, high in manganese and Lauric Acid -a healthy saturated fat to help promote healthy skin.

Gluten Free Pumpkin Pancakes with Coconut Flour 2 cage free, organic eggs (if vegan, replace eggs with 1/2 cup applesauce plus 1 teaspoon of Baking Powder) 2-6 TBSP. Coconut Milk – add according to how thick you like your pancakes 2 tsp. melted Coconut Oil 3/8 Cup Pumpkin Puree (6 TBSP.) 2 TBSP Coconut Flour -sifted - I use this brand 1/2 tsp. Ground Cinnamon 1/4 tsp. Ground Ginger 1/8 tsp. Ground Cloves 1/8 tsp. Ground Nutmeg or Organic Pumpkin Pie Spice like this one 1/2 tsp. Aluminum Free Baking Powder - this is a good choice Pinch of Salt Stevia to sweeten or your favorite sugar substitute – I used a teaspoon of pure organic maple syrup.

Mix wet ingredients in a medium bowl. Whisk dry ingredients (flour, spices, baking powder, salt), in a smaller bowl. Combine wet and dry ingredients. Whisk well until lumps disappear.

-Preheat a pan on medium/low -Melt 1/2 TBSP. organic butter or coconut oil to grease the pan - Since I have a non-stick skillet like this one I don’t use extra butter/oil. -Pour desired amount of batter on the pan, spreading out evenly in a circle – around 2 TBSP -Wait until bubbles appear around the sides to flip sides -Gently circle a spatula underneath the pancake, making sure it’s safe to flip. -Cook for about 15 seconds on the other side. -Serve on a plate and sprinkle cinnamon, and top with organic butter or your favorite syrup.
